Alberta's Peanut Butter Cookies


1 1/2 cups of flour
1/4 teaspoon of salt
1/2 teaspoon of soda
1/2 cup of sugar
1/2 cup of brown sugar
1/2 cup of shortening
1/2 cup of peanut butter(old fashioned peanut butter is better)
1/2 teaspoon of vanilla

Cream the shortening and sugars together.
Add and mix in the egg.
Mix together the rest of the dry ingredients and stir in till uniform.

Drop by teaspoonfuls onto an ungreased baking sheet, press flat with a spatula or a fork for pattern and bake at 320 degrees F for 8 min. Sis puts crushed candy cane on top of each cookie around the holidays. She also says that the temperature and timing may have to be adjusted though this is the original text of the recipe.

Less delicate cookie recipes add a beaten egg to the recipe.  These cookies are very delicate and you need to be very careful in moving them especially just out of the oven.  Other recipes that I have seen are nearly identical to this one, but have another portion of peanut butter and a beaten egg.  Try them both ways.
